Basalt Wine + Salumeria at the Crystal Lodge in Whistler is now open!

The Crystal Lodge & Suites and the Burrard Group announced today the opening of their new restaurant, Basalt. Located on the Village Stroll, Basalt will feature European-style offerings of cured meats and cheeses, an international selection of wines, and a gourmet, artisanal plated menu. The restaurant contains 65 seats inside, and a 40 seat revamped four-season patio complete with a beautiful fire pit.
“Taking on this premium location on the village stroll is such a privilege, and delivering a sophisticated environment that matches our top-notch beverage and culinary program is a focal point. To that end, we engaged the acclaimed design team at Ste. Marie Art & Design out of Vancouver to deliver on an unprecedented space. Our job now is to take that platform and provide curated offerings to our guests that showcases the best in both local and international product.” says John Holton, Director of Food & Beverage for the Burrard Group.
“We’ve created a thoughtful and engaging new option for the Whistler market by doing unique things. Take for example our old-school, hand-cranked flywheel slicer”, says Eric Gilchrist, Corporate Chef for the Burrard Group (Table Nineteen Lakeside Eatery at Nicklaus North, The Beacon Pub and Eatery and Basalt). “There’s no electricity, and it doesn’t plug in. It’s the centrepiece of our open salumeria and ‘cold kitchen’, which produces a wide variety of cured meat and cheese plates from various regions around the World. The idea is that you can actually sit at the bar and watch your platter being put together - adding a special something to the diner’s experience.”
Showcasing the best of BC’s vineyards, as well as classic regions, and cool new upcoming wine styles Basalt offers wine flights to pair with their tantalizing selection of meats. “These 3 oz portions allow you to really experiment with new blends from upcoming regions or sit back and savour a taste from a classic wine region.”, says Olivia Halla, Sommelier. This fresh and modern space will allow guests to experience a new take on mountain dining.
Basalt will also cater to a town that loves to entertain, eventually allowing customers to take away their own customized cured meat platters and cheese boards to enjoy outside of the restaurant; at a park, in a hotel room, or at home.
